Description

Moink comes from Moo and Oink since these are made from meatballs and bacon. Funny name but delicious an appetizer! Italian meatballs, stuffed with cream cheese, wrapped in bacon, smoked, and topped off with my Candied Jalapeno BBQ sauce.

Ingredients
  • 1 pound 80/20 Ground Beef
  • 1/2 cup Bread Crumbs
  • 1 Egg
  • 3 Cloves of Garlic (Minced)
  • 1 tablespoon Italian Seasoning
  • 1 pound Bacon (Thin sliced)
  • 4 ounces Cream Cheese
  • 4 tablespoons BBQ Rub
  • 1/4 cup BBQ Sauce
Instructions
  1. In a large mixing bowl combine the ground beef, bread crumbs, egg, garlic, and Italian seasoning.

  2. Slice the cream cheese into 1/4" squares.

  3. Take about 1 oz. of the meat mixture and a piece of the sliced cream cheese, and form a meatball around the cheese.

  4. Wrap each meatball with a slice of bacon and secure with a toothpick.

  5. Apply the BBQ rub to the meatballs and place in the smoker pre-heated to 250F.

  6. When the bacon looks crisp, check the internal temperature and ensure that it has reached at least 160F

  7. Top the Moink Balls with BBQ sauce and let them cook for another 3-5 minutes.

  8. After the sauce has tacked up, pull from the smoker and enjoy!
