Smoked Pulled Pork Calzone

Description

Barbeque Calzone with pulled pork, cheddar cheese, grilled onions, and French fried onions, dusted with pork barbeque rub, and cooked in the smoker. This recipe takes a classic and turns it into a legendary meal!

Ingredients
    Pizza Dough
  • 3 cups All Purpose Flour
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Active Dry Yeast
  • 2 tablespoons Olive Oil
  • Other Ingredients
  • 2 cups Pulled Pork
  • 1 cup Barbeque Sauce
  • 2 Large Onions
  • 1 cup French Fried Onions
  • 2 cups Shredded Cheddar Cheese
  • 1 Egg (Beaten)
  • 2 tablespoons Barbeque Rub
Instructions
  1. Add all pizza dough ingredients into a stand mixer, and mix until a ball of dough forms.

  2. Remove the dough and place in a oiled bowl. Cover with plastic wrap and let rise for 1 hour.

  3. While the dough is rising, slice and grill the onions and set aside.

  4. Mix the barbeque sauce with the pulled pork and set aside.

  5. Divide the pizza dough in half, and roll out into a rough circle about 1/8" thick.

  6. Covering only half of the dough circle, add cheese, then pork, then the onions, then more cheese, and finally the French fried onions.

  7. Moisten the edges of the dough, fold over and crimp the edges.

  8. Cut 3-4 slits into the top to allow steam to escape while cooking.

  9. Place in the smoker preheated to 180F for 15 minutes.

  10. Increase the temperature to 400F and let bake for ~25 minutes.
