Today we're going to be doing some barbecue candy. I'm talking about pork belly burnt ends. We're going to cube up a pork belly into small bite-sized chunks with some barbecue rub and then braise them in some sauce. It's going to be incredible! These things are almost indescribable! The melt-in-your-mouth tenderness & juiciness is going to have you loving them! Let's get cooking
Cut the pork belly into 1.5" cubes.
Season with salt if you're using our BBQ rub (which does not contain salt). If you using another rub and it has salt in it, then you can skip this skip.
Apply a generous amount of BBQ rub to all sides of the pork belly.
Place the seasoned pork belly cubes onto a drying rack, and place in the smoker preheated to 235F.
After 2 hours, remove the pork belly and transfer to a foil pan.
Add the apple juice and1 cup of BBQ sauce. Mix well. Sprinkle the brown sugar evenly over the top, drizzle with honey, and add the sliced stick of butter. Cover tightly with aluminum foil.
Increase the temperature to 275F and return the pan of pork belly to the smoker.
After 2 hours, remove the pork belly from the braise and into a clean foil pan. Cover with the remaining BBQ sauce, and return to the smoker uncovered for 30 minutes.
