This lamb loin chops recipe is delicious and easy to prepare when looking for a semi fancy dinner idea. Marinated in a little fresh rosemary, thyme, oregano, and garlic elevate this recipe to the next level, and cooking them in cast iron skillet gives a delicious sear.
Season the chops with salt & pepper to taste.
Add the garlic, rosemary, oregano, and thyme into the oil and mix.
Place the chops into a freezer or vacuum bag and cover with the marinade.
Add 2 tablespoons of oil to a cast iron skillet, and get it nice and hot.
Place the chops into the skillet and cook for 3 min. We're shooting for medium rare here so adjust accordingly if you like them cooked more or less.
Turn down the heat, and flip the lamb chops. Add the butter and whole crushed garlic cloves. When the butter has melted, start basting the loin chops.
Check the temperature and remove from heat when it reaches 130F.
